Acerenza: panettone fief

Acerenza and the panettone

The best panettone “resides” in Basilicata land of the Sassi of Matera site of UNESCO heritage.

Everyone knows that panettone was born in Lombardy, precisely in Milan, but for quite a few years there has been a panettone prepared in Basilicata, ad Acerenza: a small village a 800 meters above sea level, which is having great and remarkable success.

This fine panettone comes from the hands of the leavening master Vincenzo Tiri, pastry chef and owner of the pastry shop Acerenza shots.

It is a brand born in 1957 just in Acerenza by grandfather Vincenzo who in the small shop gave life to this exquisite panettone that has nothing to envy to the Milanese panettone.

Today, it is precisely his nephew Vincenzo (same name and surname), that carries on this historic brand that has been able to make its name known all over the world but above all to make people love “his panettone” all over the world.

Vincenzo Tiri's panettone

The panettone of the Pastry shoots Acerenza is absolutely handcrafted: from the care of raw materials to the selection of the same raw materials: also the doughs are made following an iter that makes everything unique.

This panettone is “pampered” ed “amato” from start to finish.

What is its secret?

The secret is the three mixing phases the three long leavening: the primary key to obtaining fragrance, softness and taste.

But Vincenzo Tiri, the “re” panettone, he says more revealing an even deeper secret in the roots: “My secret? The sourdough that has 110 years”. Mother yeast has been passed down for generations and refreshed every day with water and flour every four hours. E’ the same that grandfather used in his preparations.

In one word…unique goodness in the world!

Go-go awards

A perfect union of components that has given the opportunity to receive many awards.

The first recognition, maybe that more “important” he was born in 2014: got first place in the competition “Re Panettone” in Milan.

In 2017, the Red shrimp, ranked it first overall in the ranking of the best artisan panettone.

Moreover, to expand its business, Vincenzo Tiri, has opened a restaurant business, the Tiri Bakery & Coffee in Potenza, where you can savor all the goodies that Vincenzo and his family produce.

The Tiri family is a name known in Basilicata and also worldwide because of its productions, in addition to the excellent ingredients also puts a lot of love.
